Description: Single variety oil from “Lazzero” olives, an ancient variety native to the Guardistallo, Casale Marittimo and Montescudaio (Pisa) areas.

Medium fruity herbaceous oil with hints of artichoke, almond and green tomato; hints of spiciness and bitterness of medium intensity.

Green colour with yellow highlights.

The combination of this freshness and harmony with an excellent lingering flavour makes it ideal for various pairings: excellent on legumes, especially chickpeas and cannellini beans, fresh cheeses, boiled fish or white meats, in which the delicacy of the dishes is enhanced by the intense green yet soft and persistent sensations of the oil.

Harvest period: last week of September, beginning of October

Extraction method: the olives are stored for up to 4 hours and pressed on the same day in our own mill. a two-stage MORI-TEM mill without the use of water, which allows all the substances in the oil to be preserved intact.
