HARVESTING AND CRUSHING

For the more curious, we 'open the door' to one of the most important, beautiful and complexes of the year.

We produce High Quality Organic Olive Oil and during your stay you will have the opportunity, through the Tasting, to get to know a part of our work: OLIVE HARVESTING and MILLING! For the more curious, we ‘open the doors’ to one of the most important, beautiful and complex moments of the year.
Starting from the last week of September until the first half of October, we begin to harvest the olives when they are green and ripe at the ‘right point’, i.e. when we are sure that they will be able to give us ‘bitter and spicy’ as we desire, and thus a High Quality Olive Oil.
At this time, life on the farm is tinged with green sheets, frenzy and fragrance of fresh oil. For our guests we have thought of 2 different moments, one from ‘savour’ in the morning, and another to ‘enjoy’ in the afternoon:

In the morning the COLLECTION,

You will be taken to our olive groves, where Stefano will show you how we harvest olives, understand the fragility but also the strengths of ancient and resistant trees, and, for the more curious, you can try picking some olives from the tree yourself.

The afternoon FRANGITATION

We drop by the oil mill (arranged by prior arrangement), where we will show you the production process and you can taste the first freshly pressed ‘new oil’.

If you stay at the facility during this period, you will be immersed in the typical Tuscan countryside, surrounded by majestic centuries-old olive trees, enterprising young people, green olives of different varieties and shapes, Lazzaro, Maurino, Frantoio, Moraiolo, Leccino… You will enjoy a unique experience of contact with nature, tradition, innovation and respect for the land and its wonderful green fruits!

How to participate:

  • Book a stay with us in the period from 20 September to 15 October
  • Ask for info (by e-mail, by whatsapp, at reception, by phone) by writing “COLLECTING FRANGITURE”.
  • You will be contacted and we will arrange a morning in the olive groves, an afternoon at the oil mill and a Tasting* of freshly pressed olive oil.
  • Have you already booked with us at that time? We will certainly contact you to see if you like it! Have you not been contacted? Don’t hesitate to ask!

*In the period from 20 September to 15 December, Oil Tasting is suspended,
it will only be possible to have a few samples of Olio Nuovo.
